Applications are invited for a PhD fellowship/scholarship at Graduate School of Technical Sciences, Aarhus University, Denmark, within the Engineering programme. The position is available from 1 October 2021 or later.

BIOFUNC: Organic acids – Old natural compounds with underexploited biofunctionalities (re announcement)
Research area and project description:
About thirty percent of our food becomes waste. One big problem is food spoilage because of the growth of contaminating bacteria and fungi. This is a serious problem for the food industry, which needs to guarantee food safety and quality, and concurrently wants to reduce waste. Organic acids are natural preservatives from plants and bacteria that inhibit spoiling microbes. Many different organic acids exist, but it is still not completely clear why and how these organic acids inhibit microbes, and which organic acids work best in a specific food product.
BIOFUNC will investigate the structure-function relationship of organic acids using high-throughput screening methods. Next, BIOFUNC will investigate and compare the specific mode of action of selected organic acids against common food pathogens and spoilage organisms. Our results will provide fundamental understanding to make food products safer in a natural way, and to reduce food waste.
Qualifications and specific competences:
Applicants to the PhD position must have a relevant Master’s degree in Food or Environmental Microbiology, Microbial Ecology, Molecular Biology, Food Biotechnology or equivalent program.
