The Gastrophysics and Culinary Chemistry group at SDU Biotechnology, Department of Green Technology at University of Southern Denmark (SDU) invites applicants for a 20 months postdoctoral research fellowship in food bioimaging.
The position is funded as part of the VILLUM Young Investigator Project "Microscopic investigation of food during culinary preparations" that will investigate the molecular origin of food texture using modern light microscopy such as super-resolution STED microscopy and label-free CARS imaging to visualise and quantify the nano- and microscopic structure and organisation of biomolecules within food materials (https://veluxfoundations.dk/en/content/21-villum-young-investigators-receive-funding-start-research-groups). The position will be available from May 1st, 2021.
The main part of the work will aim at applying microscopy tools to shed light on the relationship between the textural properties of food, food microstructure, and the molecular re-organisation taking place during culinary preparations.

The Gastrophysics and Culinary Chemistry group was established in 2019, and currently include 2 postdocs and 2 PhD students along several master and bachelor students. The group is part of the young and aspiring Biotechnology section (SDU Biotech) offering complementary competences within the biotechnology field. The group is working closely with the SDU bioimaging facility that offers a range of state-of-the-art microscopy methods available for both high spatial and temporal resolution, super-resolution, label-free microscopy and spectroscopy, multi-photon microscopy and several standard fluorescence microscopes (http://www.dambic.dk/).
The postdoc position is likely to include shorter research stays with collaborators at Max Planck Institute for Polymer Science Mainz (Germany).

Conditions of employment
Employment as a postdoc requires scientific qualifications at PhD level. Employment as a postdoc is temporary and will cease without further notice at the end of the period.
Research will be predominant in the position. Teaching assignments can be agreed individually. Furthermore, other types of assignments may occur to a limited degree. The Faculty determines the distribution of the various assignments. The weighting of the different assignments may vary over time. The successful applicant will be employed in accordance with the agreement between the Ministry of Finance and the Danish Confederation of Professional Associations. - A PhD in science or engineering with a specialization related to chemistry, biophysics, food, structural biology or other relevant scientific area
- Experience with one or more of the following: bioimaging, fluorescence, biophysics, food science, physico-chemical characterisation, soft matter characterisation, image analysis. (The candidate must expect to be working with all these areas during the postdoc project and will get the sufficient training in the subjects that he or she is not familiar with.)
- An interdisciplinary and collaborative mind-set, be willing to work in an open and honest manner and engage in scientific discussions with colleagues, assist in supervising students (PhD, Master and Bachelor level), a scientific curiosity to explore a novel research area, and the ability to work independently.
