We are seeking a Head of Fermentation to join the noma team. We have a lot of exciting plans in the works for the future and fermentation is certainly at the forefront. We are looking for a remarkable individual with experience in a professional kitchen as a cook, who has naturally gravitated towards fermentation and R&D and has a natural curiosity for science and learning.
As the head of the noma fermentation lab, this role includes various responsibilities. You will collaborate closely with the noma test kitchen and the entire noma projects team, engaging in research and development. Additionally, you will lead a small team in producing innovative ideas for the future while maintaining the production of fermented items essential to our seasonal menu. The ultimate goal of this position is to pioneer new fermentation methods, discover new flavors, and collaborate effectively with a diverse group of people from around the world.
In addition, we require someone who is comfortable engaging with various media platforms, with fermentation as the central focus. This includes television, print, social media, events, and participation in discussion panels, among other opportunities. The selected individual will serve as a prominent representative of noma to the wider fermentation community and play a pivotal role in driving our innovation for the next decade.
This position offers one of the most exciting opportunities in the restaurant world, where daily work will be immersed in innovation, creativity, and development. While this role does not involve daily service in the restaurant, it does offer a chance to wholly focus on advancing our fermentation lab into the future.
Salary is negotiable and based on experience but besides that, we offer 5 weeks paid vacation, standard Danish healthcare (free doctor and hospital), plus additional private healthcare provided by noma which includes dental, physiotherapy, osteopath, psychologist and more. If the right individual is out of the EU system, we will help to provide legal support for visa processing.
