Responsible for the operation of the kitchen and dishwash in the absence of the Headchef – this is done by ensuring the product quality is at a high level, and that the optimal service and quality is provided to all hotel guests according to the hotel’s business objectives.

Opgaver

You will support the Executive Head Chef in the following areas:

  • Set schedule in all outlets
  • Be a role model for chefs and trainees
  • Be part of a good working environment and ensure that safety protocols are being met
  • Responsible for food flash and food cost
  • Responsible for selection of the correct purchase and selection of goods
  • Responsible for development of new menus
  • Responsible for menu engineering
  • Control operational costs and identify measures to cut waste
  • Responsible for maintaining, repairing and buying new kitchen equipment
  • Co-responsible for payroll
  • Responsible for the food quality together with team
  • Co-responsible for service in restaurants outlets with Head of restaurants
  • Responsible for high hygiene standard and cleaning standard in the kitchens, within current laws and regulations and the Marriott Brand Standards
  • Respond efficiently and accurately to customer complaints
  • Implement policies and protocols that will maintain future restaurant operations
  • Be conversant with the fire emergency procedure of the hotel and other emergency procedures as laid down by the hotel

PROFFESIONAL SKILLS, KNOWLEDGE AND EXPERIENCE

  • Minimum 5 years experience as a chef
  • Former experience in the role as executive souschef
  • Good English skills
  • Understanding of basic economics and good knowledge of O365 (outlook, time planning, excel)
  • Enjoys a hardworking environment
  • Serviceminded – always putting the guest first and providing excellent service
