The PhD position aims to investigate the development of the fish skin waste glycoproteins to high value healthy food ingredients with novel functionalities, colloidal properties, and precision prebiotic activities.

You will be associated with the Research Group for Food Production Engineering at the National Food Institute, Technical University of Denmark, and the Protein Glycoscience and Biotechnology Group at the Section for Protein Chemistry and Enzyme Technology, Department of DTU-Bioengineering.

This PhD project is funded from the Independent Research Fund Denmark (DFF).

You are expected to start 1st June 2024 , or soon hereafter.

Responsibilities
This project will investigate the valorization of fish skin glycoproteins to generate food structures with novel functionalities and prebiotic activities that impact the gut microbiota. The project will cover the following tasks:

  • Purification, characterization, and enzymatic manipulation of fish skin proteins/glycoproteins
  • Colloidal and functional properties of modified glycoproteins and their nano-microstructures
  • Development and evaluation of novel food ingredients and prebiotics candidates
  • Analyses of digestion properties and interplay of novel prebiotic candidates with the gut microbiota.

Further, you will have tasks including:

• Supervision of undergraduate students.

Qualifications

  • The ideal candidate has an outstanding academic record, high ambitions and motivation for research excellence and good command of written and spoken English. In addition, you need to be able to work independently and thrive in an international collaborative environment, where you will work in 2-3 different laboratories within the project.
  • A strong background in biochemistry/protein chemistry is critical, preferably with knowledge/familiarity within carbohydrate chemistry and/or biopolymer chemistry.
  • Theoretical and/or practical skills in one or more of the following would be a great advantage to the project: microbiology, analytical chemistry, hydrocolloids and statistical analyses.

You must have a two-year master's degree (120 ECTS points) or a similar degree with an academic level equivalent to a two-year master's degree.

Approval and Enrolment
The scholarship for the PhD degree is subject to academic approval, and the candidate will be enrolled in one of the general degree programmes at DTU. Salary and appointment terms
The appointment will be based on the collective agreement with the Danish Confederation of Professional Associations. The allowance will be agreed upon with the relevant union. The period of employment is 3 years.
