ABOUT FOLK KOMBUCHA

Folk Kombucha is a start-up kombucha microbrewery located in Copenhagen’s Meatpacking District. The two owners Niklas Harmsen and Nina Parna established the company out of an appreciation for the art of fermentation. Niklas has significant experience within the food industry, owning two restaurants Slurp Ramen Joint in Copenhagen and Stoke in Berlin. Nina has a Masters degree in Food Innovation & Health writing her master thesis on Kombucha, and authored the book “Kombucha, en levende te”.

The kombucha industry is an exciting and rapidly growing market. Our goal with our brewery and brand is to distribute our future products across Denmark and later the EU. We aim to fuse the traditionally fermented craft with a forward-thinking scientific approach. We are committed to creating a process that maintains a living, unpasteurized kombucha made with thoughtful care for our people, ingredients, and the environment. Our products are based on a pure and sustainable ideal using organic, high-grade ingredients and Nordic rooted flavors. Drinkability and consistency are a key focus, and we set to keep improving the quality of our kombucha and the processes, with a willingness to experiment and push ourselves as we grow. The brewery will also be a learning hub, carrying out events and workshops to engage and inspire people on the craft of fermentation and kombucha.

JOB DESCRIPTION

We are looking for two skilled and passionate crew members to form the core of our brewing team. As a lead brewer at Folk Kombucha, you will become a key part of our production, at the company's upscaling stage. It will be your task to upscale and establish the company’s first commercial kombucha production line, getting the opportunity to take a lead role and bringing your personal and professional competences into play in the early stages.

We offer a demanding position that requires problem-solving, structure, a willingness to learn and self-initiative. You must have former commercial brewing experience, have technical understanding, a willingness to learn and possess a positive upbeat attitude. We are specifically searching for candidates that enter the company with plans of a long lasting working relationship. There is room and opportunity to create your own position, with independent responsibility for leading the production.

Applicants will have knowledge of complex systems, automated processes, and quality control. The two lead brewers will be developing the entirety of production, leading the upscaling to success and efficiently build and carry out all brewing operations. The role consists of handling all aspects of the brewery production including fermentation management, recipe formulation, implementing and maintaining appropriate processes, managing a micro/lab analysis process. You will ensure the production schedule is followed and monitor ingredient inventories. The role encompass stock management including raw materials, finished goods, order-fulfilment for trade and retail, diligent record keeping and warehousing. You will be responsible for setting up good practices, develop and structure all duties involved with the brew house and production site, and ensure an optimal upscaling that meets the desired product goals. You will develop and ensure safe and efficient brewery operations, adhering to good manufacturing practices following all food safety directives, fill out appropriate forms and records, accurately reporting production activities, handle logistics and effectively communicate with colleagues. The two lead brewers will work closely together to facilitate daily brewing tasks and keep the brewhouse clean and organized.

The commissioning takes place 15. November, by what date both candidates will be required to participate and to have had prior time to fully understand the tasks, process, equipment and recipe frame.

ESSENTIAL DUTIES & RESPONSIBILITIES

  • Upscaling, developing, implementing and maintaning appropiate processes for all related to the kombucha production
  • Complete kombucha production, from fermentation to conditioning and carbonating, operating bottling line and packaging
  • Complete fermentation checks, monitoring of fermentation, managing both in house measurement testing, as well as outsourced lab analysis processes
  • Brewing logs
  • Recipe formulation
  • CIP operations
  • Cleaning of the production area and the washing of equipment, floors, drains, and tools to comply with company and government sanitation standards, which allows us to work cleanly and produce great kombucha in an environment with minimal stress. This means that a day never ends without the space being left clean for the next day
  • Have an overview of the brewing process, make sure that it runs and adheres to the schedule, leading production from start to finish. Building the weeks and day's objective by communication between the brewers
  • Plan operation and production schedule, to meet forecast
  • Develop and ensure quality control procedures are upheld
  • Ensure Food Safety, HACCP, GMPs and other relevant
  • Follow all SOPs and safety protocols
  • Stock management including raw materials, finished goods, diligent record keeping, and ordering of new goods
  • Warehousing, including organizing the brewery warehouse
  • Logistics
  • Minimize waste, optimize processes and workflows
  • Make observations of efficiencies and inefficiencies. Contribute to improvements and processes required to gain efficiency and quality assurance in the production department
  • Implement preventive maintenance and perform routine maintenance of equipment. Continuous adjustment, cleaning and maintenance of the bottling equipment, to minimize downtime
  • Implement practices, and ensure that they are performed and that correct orders are executed, including the correct product in the correct packaging, label and date / batch no.
  • Participate and represent Folk Kombucha in events at the brewery or out of house events, if needed
  • Other bottling / brewing / maintenance tasks that may arise


KNOWLEDGE, SKILLS & ABILITIES
MUST

  • Relevant education from brewing science
  • Prior insight and experience within the field of commercial brewing
  • Ability to follow Standard Operating Procedures and maintaining high quality standards in all areas of commercial production
  • Work with hot, cold and hazardous equipment and materials in a responsible manner
  • Physical strength is essential as this job includes frequent lifting, constant standing and walking
  • Technical ingenuity
  • Solid analytical and problem-solving skills
  • Ability to multitask at a high pace and be able to maintain focus on specific quality parameters, while meeting today's production goals
  • Passionate to improve the efficiency of brewing and processes
  • Highly organized, structured and good time management skills

  • Remain calm, flexible, and able to work through setbacks and emergencies

PLUS

  • Fluent Danish and English language skills
  • Knowledge on upscaling kombucha or other commercial experience with kombucha previously
  • Knowledge on tasting and sensorial analysis
  • Experience with HACCP, GMPs and other of relevance
  • Forklift certification, as well as experience with warehouse
  • Other scientific fields of relevance (chemistry, engineering)
  • Training as a technician, machinist or other relevant technical background
  • Computer proficiency (Word, Excel, related brewery specific software)
  • References from previous employers
